Recipe: Banana Bread

Chef John's Banana Bread is one of the best recipe I've came across. Not only it is delicious and easy to make, this loaf full of goodness also packs a healthy potassium punch. A healthier alternative for usual junk-snacking. Great for both adults and kids!

This scrumptious Banana Bread is my adaptation of John's fabulous recipe.


Difficulty: Easy-Medium

Makes 1 regular-sized loaf

Ingredients

cooking spray
2 cups all-purpose flour
1 cup white sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 cup mashed ripe bananas
1/2 cup softened butter
2 eggs
1 tsp vanilla extract
1 tbp milk
1 cup chopped walnuts
1/3 cup sultanas
1/3 cup semi-sweet chocolate chips

Steps

1. Preheat oven to 165C/325F.

2. Grease a 9X4 inch loaf pan.

3. In a bowl, whisk together flour, salt, baking powder, and baking soda.

4. In another large bowl, beat butter and sugar with an electric mixer until smooth.

5. Stir in mashed bananas.

6. Add eggs to the butter mixture one at a time, fully blending in each egg before adding the next.

7. Stir in vanilla extract and milk.

8. Stir in chopped walnuts, sultanas, chocolate chips and flour mixture until just incorporated. Do not overmix.

9. Pour batter into prepared loaf pan. Tap pan on the counter to release any air pockets.

10. Bake in preheated oven for 70-80 minutes or until skewer comes out clean.

11. Let the bread rest in the pan for 15-20 minutes before removing. Slice and serve.

Tips

1. For easy and mess-free mashed bananas, place 3 ripe bananas (depending on size) into a plastic food bag and mash them up.

2. For plumper and juicier sultanas, soak them in warm water for 1 minute, pat dry before using.

3. Another method to grease the loaf pan is to apply butter on the pan and smear it thinly and uniformly using a clean kitchen paper.

4. For slightly spiced version, simply add 1/2 tsp cinammon and 1/2 tsp ground nutmeg in Step 3.
